NØKK, an Amber Kellerbier fermented with Voss Kveik. Started with sort of an Altbier base, big toasty bread and hopped assertively with Saaz for floral, spicy and herbaceous notes. A quick Kveik fermentation and fresh packaging gives us some bright orange flesh and a touch of apricot. Fresh, malty, spicy, bitter, refreshing.

We asked ourselves if the British, rather than the Germans, discovered lager yeast and developed the lagering process to make beer, how would the beers turn out? To answer this question we decided to make a new series of beers under the banner of “Britannia Lager”. Maris Otter is the first in this series where we have made a lager beer that highlights specialty British ingredients - in this case by our use of the heritage Maris Otter malt combined with the classic East Kent Gouldings hops, both sourced from the British Isles.

In the winter of 1862, a massive fire broke out during the construction of the new Don Jail. Most of the structure was destroyed. Unfortunately, it didn’t halt building what was to become the most notorious jail in all of Canada. Jail Fire Rauchbier is a smoked lager that highlights malt that’s been smoked over beechwood. Its pronounced smokiness will remind you of campfires and barbeques and will make you grateful you never had to spend a night in the Don Jail.

A warm roasty light stout with a soft malted Chocolate finish. Oats was undoubtedly a common ingredient in ancient ales, as it was abundant, and beers made solely of barley weren’t necessarily the norm. As barley became the predominant brewing grain, others were phased out. But it should come as no surprise that oatmeal found its way into stouts later on.

Brewed with coffee from Balzac’s Coffee Roasters, sourced from the Las Rosas Women’s coffee project.
Las Rosas is a co-operative of over 400 Colombian women that aims to prioritize gender equality and promote leadership positions on coffee farms.

The cacao used in this brew was supplied by ChocoSol, and is directly sourced and traded from Indigenous communities in Mexico, Dominican Republic, Guatemala, and Ecuador.

A portion of proceeds from the sale of this beer will be donated to the Canadian Women’s Foundation, who since 1991 have been improving the lives of women and girls in Canada.

Graf’s history is not as extensive as you might think. The modern version of this beverage made its debut in the Stephen King series The Dark Tower. The only specifics of this apple-based beverage divulged in the novel is that it’s the result of fusing apples and malt into a drink. There’s no telling if what we now know as graf is derived from the novels or if its evolution was by pure coincidence.

A simple way of developing graf is simply mixing apple juice with beer wort and then fermenting it with ale yeast. Defined as a fruit beer or apple-based beer, which dates back to around 7,000 B.C., graf has a generally loose set of parameters. This leads to a wide variety of interpretations by cider makers and brewers alike, pushing the envelope of what this hybrid can be.

Roggenbier, which literally translates to 'rye beer', is rooted deep in German brewing history. This historic style was enjoyed many centuries ago and typically has grainy and spicy flavour characteristics from using at least 50 percent malted rye, low hop bitterness and classic weizen yeast characteristics of clove, bubblegum and vanilla. This is our take on a German classic!

This smooth amber-coloured ale is inspired by Scotland’s 80/- (80 shilling) beer style, priced according to its strength. The star of Monday Night Piper is its deluxe malt bill – best pale malt from England, and caramel and chocolate malts from Germany, add sweetness, rich colour and a tantalizing sponge-toffee flavour, all before finishing dry. Pairs with roast duck, lamb pie, dried fruit and nuts.
